Ittetsu X-Hammer

Ittetsu is the shop's house brand and we've been working for a long time to find high performing, affordable knives to offer our customers. Ittetsu X-Hammer line is made for us by a group of talented blacksmiths in the Sanjo region of Japan. These knives fit the bill of what you can expect from Sanjo, with a thick tang and nice distal taper towards the tip, and not quite in laser territory but very thin behind the edge.


The Knife

These knives are made of out SLD steel, which is a favorite at the shop. This makes these knives a great option for people wary to dive right into carbon steel, but maintain some of the benefits (easy sharpening, more reactive to a honing rod) carbon steel options. The thick tang and heavy distil taper gives a confident feeling in hand, but the high bevels make sure it still has a great cutting feel and high performance!

The gyuto is the Japanese equivalent of the western chef's knife. The gyuto differs from the chef's knife as they usually have a much flatter profile that while can still be used in a rocking motion, excels in a push cut or chopping motion. Designed to be an all purpose knife that can slice, dice, chop, and rock there isn't a task in the kitchen a gyuto cant handle and its the first shape we recommend people add to their collection 

 

Knife Care (Stainless Steel)

  • Although this knife is made from stainless steel we do still encourage our customers to keep their knives as dry and clean as possible.
  • NO DISHWASHER - the high heat will ruin the wooden handle.
  • Wash and dry by hand using regular dish soap and warm water using a none abrasive sponge or cloth.
  • Ensure the knife is dry before being put away for storage and ensure the edge of the knife is protected to avoid any unnecessary dulling.
  • Avoid Bones, Frozen foods, nuts and hard candies or anything other than fruits, vegetables and proteins.
