A Hangiri is used in the final step or preparation for sushi rice, where the cooked rice is spread out and fanned while being mixed with a rice paddle to help cool the rice quicker and aid in the absorption of the vinegar to give the rice a slight shine and help to avoid a mushy texture. 

It is important to season your Hangiri from the start, and to do so we recommend filling the Hangiri with water and 1/4 cup or rice vinegar and letting it sit out overnight, emptying the water in the morning. 

Moving forward, soak your Hangiri for 30 minutes prior to use and the wood will become nonstick to the rice. You don't need to set a timer just soak it while the rice cooks! 

When it comes time to clean the Hangiri, it should wipe out easily if it was soaked long enough but its okay to use a sponge or cloth to clean tricky stuck on pieces of rice, however don't use a scouring pad/steel wool/ or a rough brush as it will damage the smooth finish of the wood and compromise its nonstick properties. 

After cleaning turn the Hangiri upside down and use something to prop one side up so it dries completely and not develop any mold spots.
