A new smith to the shop, Kenshirou Hatono, a third generation blacksmith in his early 30's, is the son of Katsuyasu Kamo who has been producing knives in Echizen since 1956, and was one of the founding members of Takefu Knife Village in 1991. Kenshirou's knives are thin and light, showing his versatility with different finishes and tsuchime patterns, and lacquered handles and saya which are becoming harder and harder to find. Having already won the excellence award at the 2018 Matsumoto Knife Show, we are very happy to offer this new smiths work and are very excited to see how he grows in the years to come!
The Bunka is sort of a cross between a Nakiri and and Santoku. It's tall blade and relatively flat profile make it ideal for up and down chopping up its aggressively shaped tip makes it adept at more intricate tasks as well. This particular bunka is very light but has a nice sturdy feeling in the hand and doesn't feel overly delicate. It has a wonderful cutting feel and the damascus finish is even more beautiful in person.
Knife Care (Stainless Steel)
- Although this knife is made from stainless steel we do still encourage our customers to keep their knives as dry and clean as possible.
- NO DISHWASHER - the high heat will ruin the wooden handle.
- Wash and dry by hand using regular dish soap and warm water using a none abrasive sponge or cloth.
- Ensure the knife is dry before being put away for storage and ensure the edge of the knife is protected to avoid any unnecessary dulling.
- Avoid Bones, Frozen foods, nuts and hard candies or anything other than fruits, vegetables and proteins.
