Ittetsu is our house brand and we work with blacksmiths all over Japan to find knives to stock at our shop under this name. These particular blades are made for us by a group of Blacksmiths working out of the Sanjo region, they are hand forged from a semi-stainless steel called SLD which has very good edge retention, is easy to sharpen and good rust resistance.
This is a great combo for any home cook or professional who does a lot of vegetable prep. The petty knife is great for tasks off the board, in your hand like taking the tops off strawberries or cleaning up Brussels Sprouts. It's also great for butchery and is perfect for breaking down chickens or small fish.
The nakiri is a great knife for huge amounts of veg prep. The flat profile lends itself to an up and down chopping, or push cutting motion and is great to use in place of a scraper to move your product from board to wherever it needs to go. Not to be confused with a cleaver that can be swung through bones, this knife is light, thin, and for more refined work.
Knife Care (Semi-Stainless Steel)
- This knife is made from semi-stainless steel and we strongly encourage our customers to keep their knives as dry and clean as possible or else rust could form.
- NO DISHWASHER - the high heat will ruin the wooden handle.
- Wash and dry by hand using regular dish soap and warm water using a none abrasive sponge or cloth.
- Ensure the knife is dry before being put away for storage and ensure the edge of the knife is protected to avoid any unnecessary dulling.
- Avoid Bones, Frozen foods, nuts and hard candies or anything other than fruits, vegetables and proteins.
- Twisting and torqueing the blade on the cutting board or in an ingredient will damage the blade. Please only use in an up and down, forward and backward motion to avoid damage.
