Working out of the Takefu Knife village in Japan Yoshimi Kato has taken over the family business as the 3rd Generation Blacksmith taking over from his father Hiroshi. These knives have a beautiful feel in the hand and are razor sharp as they have been sharpened by master sharpener Makoto Kurosaki, who is the elder brother of one of our favorite knife makers Yu Kurosaki. They are forged from Aogomi Super steel which has fantastic edge retention and features a stainless cladding meaning only the 1-2 mm of carbon steel exposed at the edge is susceptible to rust or oxidation making for a high performing, low maintenance blade.
Petty knives are fantastic knives for their versatility and how nimble they are. Fantastic for breaking down smaller fish, poultry and other small game and smaller vegetable like garlic and shallots. A great addition to any home cooks collection and a must have for professionals.
