 Moritaka Hamono was founded in 1293 by master sword smith Kongohyoe Minamoto no Moritaka who was the head swordsmith for the Buddhist priests at Mt. Homan. 26 generations later master swordsmith Chuzaemon Moritaka decided to expand and apply the Moritaka family forging experience to Kitchen knives. Today Moritaka Hamono continues to produce some of the best kitchen cutlery you can buy. Each knife is forged with skills and knowledge that took over 700 years to develop and accumulate, through over 30 generations. We're very proud to have these in our shop.

Honesuki's were designed specifically as a butchery knife. The thick blade and unique shape of the tip make it great for getting in between bones and joints. Great for breaking down chickens, rabbits and many other small game and poultry as well as deboning larger pieces of protein.
