 Moritaka Hamono was founded in 1293 by master sword smith Kongohyoe Minamoto no Moritaka who was the head swordsmith for the Buddhist priests at Mt. Homan. 26 generations later master swordsmith Chuzaemon Moritaka decided to expand and apply the Moritaka family forging experience to Kitchen knives. Today Moritaka Hamono continues to produce some of the best kitchen cutlery you can buy. Each knife is forged with skills and knowledge that took over 700 years to develop and accumulate, through over 30 generations. We're very proud to have these in our shop.

Kiritsuke's are a super versatile shape; their unique tip makes them adept at both slicing larger pieces of proteins and completing smaller more intricate tasks like brunoise shallot's. Its also nice and tall which gives the user lots of space for their knuckles when using an up and down chopping motion. They also look pretty sweet and this 240 mm version has a nice large handle, perfect for the person with big hands.
