A long blade that is short from heel to spine makes this style of knife perfect for slicing proteins. The long blade offers the opportunity to make long strokes which is necessary for achieving the perfect slice while the short profile reduces friction with the ingredient further improving its abilities in this area. The sujihiki is not a versatile shape and does not lend itself well to any other tasks.
Moritaka Hamono was founded in 1293 by master sword smith Kongohyoe Minamoto no Moritaka who was the head swordsmith for the Buddhist priests at Mt. Homan. 26 generations later master swordsmith Chuzaemon Moritaka decided to expand and apply the Moritaka family forging experience to Kitchen knives. Today Moritaka Hamono continues to produce some of the best kitchen cutlery you can buy. Each knife is forged with skills and knowledge that took over 700 years to develop and accumulate, through over 30 generations. We're very proud to have these in our shop.
