Named after the first ever iron clad destroyer in the Japanese Navy, The Kotetsu, shares its name with the ship as they both have a slanted tip. While the slanted shape helped the ship slice through the sea; on the knife it helps score vegetables, seafood and other meats with great efficiency. The belly of the knife is designed to make the most contact possible with the cutting board without causing too much friction, a happy medium. The spine of the knife is mirror polished to provide control, comfort and safety while the sides of the blade are left slightly "rough" to minimize friction between the food and blade, helping it glide through almost anything. These knives are some of the most beautiful and best performing knives we've ever had the pleasure of using. Super thin, sharp, lasers. These knives are great on maintenance as well. Clad in stainless steel they won't rust; we still suggest keeping them as dry as possible.
