Sukenari Hamono has a great reputation in Japan for creating beautiful, high quality, great performing knives. They specialize is using High Speed Powdered steels like SG2(R2), ZDP-189 and HAP40 which are renowned for their durability and edge retention. They opened their doors and began making knives in 1933 and have changed shops multiple times throughout their history finally settling in their current shop in Toyoma, Japan in 1985. Nobuo Hanaki is the 3rd Generation owner of the shop and took over from his Father in 1985.
This particular Sujihiki is made from ZDP-189 and features a stunning Damascus pattern on it's blade that's fixed to an equally as stunning handle made from Ebony and a Buffalo Horn ferrule. Weighing in at 151 grams it is quite light for a knife of this length. Thin both behind the edge and at the spine gives this beauty a fantastic cutting feel and it balances right at the Kanji making it very comfortable in the hand; the nicely sanded spine and choil contribute to this comfort as well.
Knife Care (SG2 Stainless Steel)
- Although this knife is made from stainless steel we do still encourage our customers to keep their knives as dry and clean as possible.
- NO DISHWASHER - the high heat will ruin the wooden handle.
- Wash and dry by hand using regular dish soap and warm water using a none abrasive sponge or cloth.
- Ensure the knife is dry before being put away for storage and ensure the edge of the knife is protected to avoid any unnecessary dulling.
