They opened their doors and began making knives in 1933 and have changed shops multiple times throughout their history finally settling in their current shop in Toyoma, Japan in 1985. Nobuo Hanaki is the 3rd Generation owner of the shop and took over from his Father in 1985.
This particular Gyuto is quite light overall and has great, slightly blade heavy balance. It has great feel in the hand achieved both with the lovely magnolia wood handle and the overall fit and finish. The ferrule and handle flow seamlessly together and the blade and handle are fitted together beautifully with no spaces where the tang and handle come together. This is a great knife for Professionals and Home cooks alike looking for a durable knife with great performance and edge retention.
Knife Care (SG2 Stainless Steel)
- Although this knife is made from stainless steel we do still encourage our customers to keep their knives as dry and clean as possible.
- NO DISHWASHER - the high heat will ruin the wooden handle.
- Wash and dry by hand using regular dish soap and warm water using a none abrasive sponge or cloth.
- Ensure the knife is dry before being put away for storage and ensure the edge of the knife is protected to avoid any unnecessary dulling.
