This Gyuto is on the lighter side, and along with its thin blade makes for a very nimble comfortable knife. Made from Ginsan #3 steel which contains high amounts of carbon for added edge retention and is stainless so it won't rust.
Yamamoto-San learned his trade along side his brother at Yoshikane Hamono. In 2013 he struck out on his on and began making knives under his own name.
