This guy is nice and tall for a petty knife, also has a bit of a belly which makes it great for herbs, shallots, chilies and other small ingredients. Also really great for butchering poultry, small game and even some smaller fish. Made from Ginsan #3, which has a high carbon for good edge retention and is stainless so it won't rust.
Yamamoto-San learned his trade along side his brother at Yoshikane Hamono. In 2013 he struck out on his on and began making knives under his own name. We're extremely proud to offer these knives as they are beautifully made, are perfectly balanced and have an amazing cutting feel. Suitable for those who like to use a rocking motion or push and pull. The burnt chestnut handles contribute a great deal to our fondness of these knives as well; not only are the aesthetically gorgeous, but the charring of the wood contributes to a comfortable and grippy feel.
