Kurosaki-san was inspired by Raijin, the god of thunder, when he created the finish on these knives. Meant to emulate the cracking of thunder and lightning they are the newest offering from one of our favorite blacksmiths.
These are easily some of the most beautiful knives we have at the shop. Made by Master Blacksmith Yu Kurosaki who works out of a newly constructed shop just steps from the Takefu knife village community centre. He began his blacksmith journey in 2002 at Kanehiro and now only 17 short years later he has been awarded his Master Blacksmith designation by the Echizen Blacksmith Foundation. His knives represent the future of Blacksmithing in Japan as he focuses on traditional technique while using innovative and progressive design's and finishes that have garnered the attention of many chef's around the globe. Simply put his knives are stunning to look at and dare we say perform even better than they look.
The Nakiri is designed specifically for vegetable chopping. It's tall profile gives the user tons of travel when using an up and down chopping motion and the flat profile means almost the entire blade contacts the surface of the board and puts an end to those stuck together pieces. Flip the blade over and you can use the flat spine to easier scrape ingredients accross your board without damaging the edge of the knife.
Knife Care (Stainless Steel)
Although this knife is made from stainless steel we do still encourage our customers to keep their knives as dry and clean as possible.
NO DISHWASHER - the high heat will ruin the wooden handle.
Wash and dry by hand using regular dish soap and warm water using a none abrasive sponge or cloth.
Ensure the knife is dry before being put away for storage and ensure the edge of the knife is protected to avoid any unnecessary dulling.
Avoid Bones, Frozen foods, nuts and hard candies or anything other than fruits, vegetables and proteins.
This is the pinnacle of stainless nakiris. I wanted something that would be easy to care for as a daily driver, and this knife is perfect for that. I've had it for a couple of weeks now and every time I use it I am impressed with how impeccably sharp it is. You have to take care to ensure you don't twist or scrape the knife because the razor sharp edge may chip (hasn't happened to me, but you can feel how delicate the grind is when you use it). The unique hammered pattern is beautiful and nothing like anything else in my collection. It doesn't release quite as well as I would want it to, but it is definitely less sticky than a smooth-sided knife. The weight and balance is perfect and the handle, despite being wood, feels soft as velvet in your hand. For me, the grip on this blade is the most natural and comfortable out of any of my knives. Wish I could afford to buy more knives from this series! Would recommend to anyone who wants the best of the best in terms of quality and a showstopping work of art at the same time.
