Based out of the industrial city of Amagasaki , Hyogo Prefecture, Japan, Hatsukokoro offers a wide breadth of handcrafted blades, sourcing from a variety of knife making regions across Japan. The Knife

The Honesuki is a Japanese butchery knife originally designed for breaking down chicken. The reverse tanto tip, or K-tip, gives this knife great precision and allows the user to get in between joints and around bones with ease. The thick spine gives the knife a robust feel and though it is thin behind the edge, it's not as thin as other Japanese knives making it slightly less prone to chipping. This knife is not meant to go through bones and will likely chip if used to try to cut bones.


Knife Care (Stainless Steel)

  • Although this knife is made from stainless steel we do still encourage our customers to keep their knives as dry and clean as possible.
  • NO DISHWASHER - the high heat will ruin the wooden handle.
  • Wash and dry by hand using regular dish soap and warm water using a none abrasive sponge or cloth.
  • Ensure the knife is dry before being put away for storage and ensure the edge of the knife is protected to avoid any unnecessary dulling.
  • Avoid Bones, Frozen foods, nuts and hard candies or anything other than fruits, vegetables and proteins.
  • Simply Wipe the knife with a damp cloth immediately after use to keep it from rusting or discouloring.
  • Never put your knife in the Dishwasher. The extreme heat will ruin the wooden handle.
  • Highly acidic ingredients (Onions, Tomatoes, Citrus) Will cause rust and oxidation to happen faster, thus the user must ensure the knife is wiped clean immediately after working with such an ingredient.
  • Should any rust form it can be removed using a rust eraser or a mixture of Baking soda and water to simply scrub it clean.

This feels great in my hand, very sharp out of the box. The balance is somewhere between the blade and the handle, I couldn't quite find it. It feels a little more blade heavy though. The knife is also very beautiful.

Amazing knife, it came well packed, it came razor sharp, has a good weight for a knife and near perfectly balanced. I recently used it to butterfly some chicken legs, it went through effortlessly, the handle feels amazing in the hand especially if you have something on them

The knife arrived very sharp. This is a beautiful knife, the pictures do not do it justice.

This knife is now a bit of a celebrity in the kitchen, with its absolute ability to be utilized like a precision tool. The greatest chicken butchery knife I've ever owned. It gives confidence not just in its looks, but sharpness and quality. And to be able to acquire it within driving distance, from a professional shop, is a blessing.

I have 6 knives from Sharp. From everything from a petty to two bonding knives. This one is by Fay my favorite.

Nice blade. Sharp out of the box. Carved out a cooked chicken with ease ... and avoided the bones. Easy knife to manoeuvre.

Great value knife. Very attractive, low maintenance. Generally I prefer more reactive steels that build patina, but this is a great honesuki.

Awesome knife, good edge retention and a total blast to sharpen!

I was quite pleased when I opened the box with this knife - it is beautiful. And it made quick work of two chickens - cutting smoothly with that small reverse tanto tip easily getting into the "oyster" hollow and gliding across the ribs. The knife, out of the box, is super sharp - cleaving a paper sheet without slicing, just pushing straight down. I would buy this knife again in a heartbeat!

Aside from being a beautiful know I found it to be sharp and sturdy. It worked well trimming chicken breasts and was tough while separating wings. Can't wait to use it for more poultry tasks.

Great knife! Do a lot of proteins at work usually have to touch up my knife every week, I’ve not had to use a stone in over a month on this!

Very sharp out the box whetstoned it once and very happy with the performance handle is great feels nice in your hand I could butcher 50 chickens whiteout any discomfort very happy would recommend to anyone.

I have been interested in trying the Ginsan for awhile now and happened to be in the market for a Honesuki when I seen this, it’s nice and chunky where it needs to be yet still very light in hand, the stabilized birch handle feels very nice as well. I really like the hammered finish. Broke down a chicken in record time, very sharp out of the box but I did run it across a #1000 and strop before butchering.

Youre not going to find one better at this price point. I was interested in trying out this Ginsan steel, for a butchery knife, this fits the bill rather nice.

The cheaper one is nice, but this one is gorgeous, it has abit of a thickness to it but, fundamentally i love that. The photos dont do it justice, if you’re looking for a gorgeous knife and handle please buy this one over the cheaper one(unless youre on a budget).
