The bunka is an all purpose knife that can be thought of as the santokus older, meaner brother. The reverse tanto, or k-style tip makes intricate tip work a breeze, and the flat profile and tall blade make this bunka a great chopper. Relatively thin behind the edge, these knives have a good cutting feel but aren't as delicate as some of our more laser options, making this a great knife for a first time buyer looking for a full carbon option to play with or a professional workload.
Knife Care (Iron Clad)
- This Knife is made from 3 layers of material; A layer of iron on each side protecting a layer of carbon steel at the core, in a process referred to as Sanmai or forge welding. Iron and carbon steel are both susceptible to rust and must be kept dry and clean at all time’s to avoid oxidation and discolouration.
- Simply wipe the knife with a damp cloth immediately after use.
- Wash with regular dish soap and warm water using a none abrasive sponge or cloth.
- Never put your knife in the dishwasher! The extreme heat will ruin the wooden handle.
- Highly acidic ingredients (Onions, Tomatoes, Citrus) Will cause rust and oxidation to happen faster, thus the user must ensure the knife is wiped clean immediately after working with such an ingredient.
- Should any rust form it can be removed using a rust eraser or a mixture of Baking soda and water to simply scrub it clean.
- Avoid Bones, Frozen foods, nuts and hard candies or anything other than fruits, vegetables and proteins.

Very nice shape for a BUNKA, tall hill with a flat belly, it make it easy to day to day chopping. Not shaving level when it came out the box but after 5min on a 12,000 stone is razor sharp. I was looking for a bunka for almost 4 months and this one catch my attention :D my initial budge was around 500$ so this do the job in a cheaper way !
PS: Not a beginner knife, Aogami require extra care, very reactive metal

This baby hums, she's so sharp. Dope shape, very pronounced tip, nice flat belly. Looks a little more flashy than I thought it'd be but thats not a bad thing? Nice weight, fun to work with. Next to my Misono there's not much in the kitchen I cant do. Very reactivate, so build up that patina yall
