Ryusen Hamono
Ryusen Hamono is another fantastic maker working out of the renowned Takefu Knife Village, based in Echizen City, Fukui Prefecture, Japan. They fully embrace the tradition of the region and take great pride in every step of the knife making process. Ryusen Hamono works primarily with SG2/R2, a high powder stainless steel that is very hard and grinds super thin behind the edge. The blades generally have a shorter blade height, which makes them great for precise slicing tasks. Their profiles vary quite a bit, from aggressive sweeping k-tips to more traditional yet modern gyuto shapes. The blades are very consistent, as they employ both modern and traditional techniques, each blade is hand sharpened and impeccably sharp out of the box. Every handle has a unique pattern, particularly the Blazen line, which has a distinctly comfortable taper, compared to the Tanganryu line, which is a hybrid western micarta handle, also with a smooth finish.

The petty knife is the Japanese equivalent of a utility knife. They typically range in size from 90 mm (3.5 inches) to 150 mm (6 inches) and have a slender, easy-to-control, short blade. They are a perfect accompaniment to a Gyuto, Santoku, or Bunka, as they facilitate smaller tasks. Shorter versions are great for in-hand use. Longer versions are great for fine chopping and managing small ingredients on a cutting board. They also handle butchery tasks with ease.
R2 and SG2 are technically different steel types, but are so similar we and many other retailers lump them into the same category. They are what’s known as a “quick powdered” stainless tool steel with incredible edge retention and corrosion resistance. Their one drawback is that their hardness can make them difficult to sharpen. It is not a steel we would recommend for those planning to thin and polish the bevels of their knives unless they are equipped with the proper tools (you will need a low grit stone in the #200 grit range).

LOW MAINTENANCE
Stainless steel Japanese knives are made in a process called “Sanmai” or “Forge welding” where two softer layers of stainless steel are laminated around a harder core layer of stainless steel. All three of these layers are rust resistant and therefore are not susceptible to rust or discoloration. The softer outer layers of steel are used to make the knife more durable and flexible while the harder core layer is used to provide better edge retention to the blade.

The tiny little helper is great for all the detailed work you really want to do directly. Even though it is small enough to work with stuff held directly in the hand, it is still big enough to do some tasks on the cutting board as well. The knife has an incredibly sharp cutting edge that lasts a long time. The SG2 steel is now my favourite. The handle is simple yet its contours is comfortable and locks the grip in. Build quality is worthy of its price point. I think this is a great petty that would complement a gyuto well.

Not my first Ryusen knife- I have owned others. This new Blazen line fit and finish is 10/10. The tapered wa handle is the most comfortable handle I have ever used. The Canadian maple is a nice touch and other attention to detail such as the rounded knife spine is appreciated. The knife it self is one of the lightest petty knives I have used and it cuts like a lazer. I use this in a professional kitchen on a daily basis and don't think I have used a nicer knife (both petty and guyoto are now in my knife roll). Expensive.... Yes but I have no regrets.

I'm new to Japanese knives and the sales team has been very helpful answering all of my questions.
