For those of you who want to get into Japanese cutlery but don't want to spend too much we introduce the Tsuchime line from Ittetsu Hamono! Ittetsu is the shops house brand and we've been working for a long time to find high performing, affordable knives to offer our customers. These are made for us in a factory setting in Seki city, a region renowned for its Cutlery manufacturing which dates back centuries. These knives are great for home cooks and beginner chef's as they are easy to maintain being made from Stainless steel, are super duper sharp right out of the box and have a more familiar western style handle.
The Sujihiki is meant for all things slicing. The long slender blade allows the user to perform nice long strokes and avoid sawing through proteins which leads to perfect, thin slices and no more tearing. Carving roasts, slicing brisket, thinly slicing fish are all within its grasp.
Knife Care (Stainless Steel)
Although this knife is made from stainless steel we do still encourage our customers to keep their knives as dry and clean as possible.
NO DISHWASHER - the high heat will ruin the wooden handle.
Wash and dry by hand using regular dish soap and warm water using a none abrasive sponge or cloth.
Ensure the knife is dry before being put away for storage and ensure the edge of the knife is protected to avoid any unnecessary dulling.
Avoid Bones, Frozen foods, nuts and hard candies or anything other than fruits, vegetables and proteins.
Great value for a starter slicer (especially bought at a sale price), gifted to one of my line cooks who loves it. Sharp out of the box, low maintenance.

I really loved the sharpness out of the box! Well worth the money paid. It is also lacking a little with fit and finish. The bottom of the handle was rubbed off and didn't match the rest of the handle and I am hoping the handle stays together and this is just a looks issue and not a function issue. Also, there are a few sharp edges that needed to be de-burred as they are sharp enough to cut into your skin. Over all I really enjoy. Fixing the issues mentioned would make it a 5 star knife in my opinion. It works great with breaking down several King Salmon twice weekly so far.

This knife was exactly what I was looking for. A quality knife for a good price! It's not an everyday knife for me, but it's been nice to have when I slice a big piece of meat. I like that it's stainless steel in case I cut meat outside and so I don't have to worry about wiping down right away. Also, it feels quite sturdy and not overly fragile. I'm going to trying making maki rolls with it soon.
