Seki Kanetsugu was founded in 1918 by Matsujiro Kawamura, descendant of the famous swordsmith Kanetsugu, who worked during Nanboku-cho period. The Zuiun line was made for the 100th anniversary of the company and features an R2(SG2) steel core, with a stainless damascus cladding, and a heptagonal (7 sided) handle made from pakka, which I find fantastically comfortable and unique, and especially good for the finger on the spine technique which I like to use for intricate slicing tasks. The blades are quite thin at 1-1.5 mm spines in this line and feature a very mild convex grind, helping a great deal with food release.
The Kiritsuke is to the gyuto what the bunka is to the santoku. With a flatter profile and more agressive tip this knife will excel at push cutting, chopping, slicing, and intricate tip work tasks. Not to say that you can't rock over bunches of herbs or shallots, but if you consistently rock this might not be the knife for you. But if you're a push cutter/chopper you will absolutely love this knife!
Knife Care (Stainless Steel)
Although this knife is made from stainless steel we do still encourage our customers to keep their knives as dry and clean as possible.
NO DISHWASHER - the high heat will ruin the wooden handle.
Wash and dry by hand using regular dish soap and warm water using a none abrasive sponge or cloth.
Ensure the knife is dry before being put away for storage and ensure the edge of the knife is protected to avoid any unnecessary dulling.
Avoid Bones, Frozen foods, nuts and hard candies or anything other than fruits, vegetables and proteins.
Out of a half dozen Japanese knives I’ve used, by far the sharpest out of the box knife I’ve tried.
Thin blade falls straight thru fibrous root vegetables such as oversized sweet potatoes with barely any effort.
Cuts stacks of green onion with zero compression.
Highly recommend.

This is my first "expensive" knife and I must say, this is a work of art. Not only is the fit and finish amazing but how the knife looks and the feel when cutting anything is superb. I had a question about the knife before it had arrived so I sent an email inquiring about it and I got an answer from the owner of the shop himself in what seemed like no time at all. It was well worth the money, and I plan on buying more knives from this shop in the future.

I've had this knife for a few days now and I am absolutely blown away by this knife. It chops through vegetables like they aren't there, it slices through meat effortlessly, it's light so you feel in control but strong to get the job done. This is my first real chef's knife ever and I love it. Super happy I went with the 210 mm because it is plenty big enough for what I need it to do. Thank you Sharp for steering me to this knife I absolutely love it.

Normally, I'm long winded with no discernible direction or even the slightest idea where the reviews I write go. I'll keep this super quick.
I do not like this knife. For all the reasons people are fond of it, I have loathsome disdain; the ridiculous handle alone could fill pages.
I get that the Japanese thrive on efficiency and tradition but this handle almost gives the middle finger to both. It's seven sided, slippery and small. Compared to a Miyabi black 140mm santoku I never use --whose handle is a perfect fit for a four year old-- this Kanetsugu Zuiun feels even more anemic. That is just about the worst thing you could say about a handle for such an imposing kiritsuke.
This will be only the second time I have not been completely happy with a knife from the 'Shop, the first one just taking some time to fully understand how amazing it would eventually be. So that's good, I suppose.
This knife has no future in my bag, on my board or wound up all cozy in a roll. Nope, this knife, with its questionable SG2 steel and silly balance make this the perfect gift for someone who likes a mini sword that's super pretty and shiny and all Damascus-y when he or she cuts into whatever dry and boring thing they serve for friends and whatever holiday they are trying to get through
A quick steel side note: I'm about 99.799% positive that this blade is in fact, true SG2 but the way it sharpens and the way it seems to scoff at the stones makes me wonder if my technique is poor. And it is. Poor. But adequate. So perhaps it's the published 1.5-1mm thickness. Either that measurement was a typo or maybe intended for another knife because this cuts like it's about 2.5mm or even 3.0.
So, two stars for making it 100 years. Quite a milestone. I'd like to think that with anything you do, if you had a 100 years under your belt you would probably be disappointed, at the very least, someone would be fired or whipped.

I truly love this knife , I originally bought this knife because of how amazingly beautiful it looks , first off the handle is amazing , the most comfortable knife I’ve owned and if your one who chops for a long period of time you know how tiring it can get but not with this guy, it comes sharp out of the box , it performs flawlessly, it Works better than my meat slicer , precision cuts . You can’t go wrong with this beauty .
