Takeshi Saji is a master craftsman working out of the famed Takefu knife village, an co-op of incredible craftspeople renowned for it's kitchen knife production. In 1992 he was recognized by the Japanese government as a "Traditional Master Craftsman" and he was one of the founding members of the Takefu knife village. He hand forges each of his knives using the traditional methods passed down through the generations over the past 700 years.
The Bunka is an all purpose knife similar to the Santoku. It has a more aggressive tip and slightly flatter profile making it an excellent push cutter and chopper, while maintaining an aggressive tip for more intricate work like brunoise garlic and shallots , or piercing the skin of a fish or parting chickens.
*These knives are very thin, and more prone to chipping or other damage with misuse that some other options that we carry at the shop*
Knife Care (Stainless Steel)
Although this knife is made from stainless steel we do still encourage our customers to keep their knives as dry and clean as possible.
NO DISHWASHER - the high heat will ruin the wooden handle.
Wash and dry by hand using regular dish soap and warm water using a none abrasive sponge or cloth.
Ensure the knife is dry before being put away for storage and ensure the edge of the knife is protected to avoid any unnecessary dulling.
Avoid Bones, Frozen foods, nuts and hard candies or anything other than fruits, vegetables and proteins.
Simply Wipe the knife with a damp cloth immediately after use to keep it from rusting or discouloring.
Never put your knife in the Dishwasher. The extreme heat will ruin the wooden handle.
Highly acidic ingredients (Onions, Tomatoes, Citrus) Will cause rust and oxidation to happen faster, thus the user must ensure the knife is wiped clean immediately after working with such an ingredient.
Should any rust form it can be removed using a rust eraser or a mixture of Baking soda and water to simply scrub it clean.
I have been looking at Takeshi Saji San knives for a while now and Sharp Knife Shop are one of the main shops I use.
They had new stock and there I saw the Bunka in rainbow Damascus (pattern welded) and it was love at first sight. I have always favoured the Bunka shape over others and this one was pretty stunning I must say.
The grind is superb with no shinogi it feels as close to a zero grind as you can get, it tapers perfectly down to the cutting edge,
The fit and finish is done with class from the extremely comfortable handle to the softened spine and choil, you could go for a long time with this knife without any discomfort.
Cutting performance is also superb, VG-10 takes a great edge and with this knife, holds it very well only needing a strop to keep it sharp for a longer time before the stones are needed.
Sometimes when a knife looks this beautiful one can become a bit sceptical about it's function as a useful tool in the kitchen. There is no need to worry in this case, it is fantastic at doing what a knife should do and a real pleasure to use.
Form and function is a rare thing these days, Saji just nailed it.

Absolutely beautiful and the sharpness is incredible out of the box, I did give the knife a little more sharpening with the #8000 Cerax stone and was unbelievable. 1st day at work with it and CUT LIKE BUTTER. I love the knife and is my new favorite personal knife and a must go to every time
