The Tosaichi Ao Super series of knives feature a stainless clad, Aogami-super core hardened to 62-63, magnolia handles with buffalo horn ferrules and a very sleek finish. While the term “laser” is very subjective we don’t often see knives much thinner and lighter than these. Practical and fun to use, we can’t see anyone being disappointed by one of these!
Located in Tosa city, Japan these knives are forged for us by a group of blacksmiths over seen by head blacksmith Suzuki-san. The history of Tosaichi Hamono can be traced back 800 years and is rooted in traditional forging techniques developed over the centuries coupled with new age techniques that make for some really beautiful knives at affordable prices. They work with a wide variety of steels which allows them to offer knives that are suitable for many people.
The Gyuto is the Japanese equivalent to a standard western style chef's knife and is an essential for the professional cook/chef. It is without question the most versatile knife available and can handle a wide variety of tasks. If you're a home cook they are a great option as well provided you are comfortable with the length.
This knife is made from 3 layers of steel using a technique called Sanmai (Forge welding). It involves laminating a piece of Carbon steel with two pieces of Stainless steel giving the knife all the benefits of the carbon steel (Edge retention, ease of sharpening, cutting feel) and the Ease of Maintenance from Stainless steel. 2-3 millimeters of the carbon steel is exposed at the edge of the knife and is susceptible to rust and discouloration if not properly maintained.
Simply Wipe the knife with a damp cloth immediately after use to keep it from rusting or discouloring.
Wash with regular dish soap and warm water using a none abrasive sponge or cloth.
Never put your knife in the Dishwasher. The extreme heat will ruin the wooden handle.
Highly acidic ingredients (Onions, Tomatoes, Citrus) Will cause rust and oxidation to happen faster, thus the user must ensure the knife is wiped clean immediately after working with such an ingredient.
Should any rust form it can be removed using a rust eraser or a mixture of Baking soda and water to simply scrub it clean.
Avoid Bones, Frozen foods, nuts and hard candies or anything other than fruits, vegetables and proteins.
Beautiful knife, light and super sharp, I recommend to sand and oil the Handel since the wood is still very fresh. Just became my new everyday knife.

This is my first Gyuoto ever and happy I chose Sharp Knife for the purchase! I really love that the knife is super light to make it easy to handle for a longer blade. It feels comfortable to do any style of cuts because of the design and feels super durable. I enjoy bringing this knife to work I let my boss try it out and she approves! The knife is also not super reactive to food acids which is a plus for carbon steel type of blades. Highly recommend this knife and the staff was amazing when I called for a shipment checkup and concerns, very responsive and friendly.

First “laser” and I love this. Very nice edge and light, but balanced. My only knock is that the magnolia handle feels a bit rough. Will try some fine grit sandpaper.

This knife exceeded my expectations - I know this was used in the knife abuse test and it is amazing. Incredibly sharp and quite sturdy. I would highly recommend this for anyone looking for a carbon steel knife.

I was looking for a 210 mm knife with super blue steel. This one checked all the boxes. I’m a cook by profession and this knife has been a joy to use at work. I’ve been using it with a ceramic rod and it holds its edge great. Heat treat seems legit. Shipping was super fast too. Ordered a custom leather sheath off of Etsy for it. I’ve sharpened it once and it was a joy. Also, it’s affordable. I wouldn’t take a $500 dollar knife to work cause at some point, they always get dropped. Anyway, would recommend both this knife and the seller. You can’t really go wrong here

Definitely "laser status" as Gage says

Love the control, admire the sharpness. The size was intimidating, but it now feels like a small knife to me, great start to the collection!

This is my first Japanese knife so I don’t have much to compare it too. That said, I’m amazed with how it handles, and it looks even nicer in person. I got some helpful advice from the Gage via email and couldn’t be happier with my purchase. Going to pick up a Nakiri from them next!
